Grown at 900–1,700 MASL across multiple regions of Mexico, this coffee blends Bourbon, Caturra, Mundo Novo, and Typica varietals. Decaffeinated using the chemical-free Mountain Water Process at Descamex in Mexico, this method preserves the coffee's natural flavor while gently removing 99.9% of the caffeine. Green coffee is soaked in pure water to extract both caffeine and flavor compounds, then the water is filtered to capture only the caffeine molecules. The flavor-rich solution is reintroduced to the beans, allowing them to reabsorb their original character before being carefully dried and prepared for export.
